When I made this to-go recipe, I used the saffron with the ginger and garlic. It is called “Kurma Kuri” (ओषठ्स) in Punjabi. You can also buy it at home in a store.
So, if you are not into saffron, use fresh, crushed, and it will taste pretty good!

Fresh black sesame seeds
Green peppercorns, fresh

Dried tomatoes (or fresh or frozen), chopped, to use as garnish Instructions First fry these sesame seeds in the pan with the black sesame oil.
Cut the tomatoes in cubes and toss between the two sides.
Now add the dried tomatoes and black sesame oil.
Cook for one more minute.
Remove any dry air and pour the oil on the rice.
Leave it to cook for 20 mins, or until you get a beautiful golden brown color.
Transfer the rice to a bowl and add the lemon slices and the salt.
The mixture will get sticky but when you put it in your mouth, do not gulp any oil.
Put the tomatoes with the sugar water over a pan and boil them. Add the water to the tomatoes.
Keep the tomatoes with some water on the stove and cook for one more minute.
The onion and peas will start to cook in the rice. You can let the peas cook for one minute on the stove too.
Add the green peas and stir. After some stirring cook it for 2 more minutes.
Add the kurma kuri. Leave for a little more.
Remove it from heat, and cover a pot. I used an open pot but you can make it inside a pot.
Add water or vegetable stock in it. Now add a pinch of chili powder and saffron water.
Cover the pan tightly and cook for 30 seconds. You can remove from the heat.
Simmer for a little while. It will get spiced a little bit and become sour. Taste it and it will taste good.
Serve with green chutney
